For an evaluate / discuss / motivate question, don't only name the principle.
Write:
PRINCIPLE + EXAMPLE FROM MENU + WHY IT IS GOOD/BAD
That is the skill learners need for the higher-mark menu-planning questions.
The 2020 memorandum specifically accepted avoiding repeated ingredients and cooking
methods, colour variety, nutritional balance, food groups, shapes and different temperatures
when evaluating a menu.
EXAM TIP
Do not simply write:
“Good variety.”
You need to motivate your answer using the actual menu.
Example:
“Poor variety of cooking methods because both the fritters and koeksisters are deep-fried.”

Don't write only:
Good colour.
Write:
There is good colour variation and contrast between the different cocktail
snacks, making the platter visually appealing.
Or:
The snacks have a variety of shapes and dimensions, which creates visual
interest.
