Time To Scrub
“We're scrubbing tonight!” The dreaded three word phrase that almost every cook hates
to hear at the end of a long night. Scrubbing the floors is a universal kitchen routine no matter
where you go. Yet everyone does it differently and somehow runs into the same issue. Why is it
so easy to wet the floors then scrub but such a struggle to dry them and squeegee? If you have
worked in a kitchen then you understand the struggle of trying to fit a rectangular shaped flow of
water into a small circular drain. This thought came to me one night scrubbing at Caterina. The
issue is that most kitchen drains are shaped like a circle. Instead, they should be rectangular
preferably shaped similar to a squeegee. This eliminates any time wasted trying to go back and
forth to get all the water down the drain. It will also prevent the terrible back pain that every
cook feels after deep cleaning the floors on a late Friday or Saturday night. After all, who
wouldn’t wanna get home an extra thirty minutes early on those nights. Having circular drains in
a kitchen is just one of the many inconveniences that a cook encounters on a daily basis . So let’s
change that and move into a world where cooks and chefs alike, begin to make their kitchen
work for them. As we all know it’s always better to work smarter and not harder.
