Why do we discourage "previews" and do not allow friends and family
nights? - Answers :Preview parties or Friends and family nights run a risk of get out of
hand.
Why don't we add menu items? - Answers :We use the K.I.S.S. philosophy. Any
additional products would have to be just as
good as our burgers and fries. Trying to do that might take away from quality of our
main products. Keeping the menu simple for the crew so that they can execute the
products and has kept Five Guys #1.
Why don't we deliver? - Answers :The Five Guys experience cannot be delivered. The
delivery process would decrease
the quality of our product.
Why do we prep 64 patties into a cambro rather than 96? - Answers :So patties do not
get smashed and dried out on the bottom of the cambro
Why don't we use squeeze bottles of peanut oil to lubricate the
potato cutter? - Answers :We use paper towels dipped in oil because it prevents us from
having a container
that can leak, drip, or be cited by Steritech/Health Dept for improper labeling.
Why can't we prep tomatoes straight into the 1/3 pan? - Answers :This type of prep is
not good for overnight storage. Tomatoes in third pans are for
immediate use on the line and the tomatoes can be stacked higher than normal.
Tomatoes that are stacked two tomatoes high the black bus tub will be held for a
longer time which can allow them to crush if stacked too high.
Why can't we put the foil down before we put the ticket on the
dressing table? - Answers :You do not know how many sheets are needed until the
ticket prints. Putting down
multiple pieces of foil without tickets can cause confusion on the dressing table and
can lead to incorrect orders. We only dress one ticket at a time.
Why do we use paper towels and not foil to cover the bacon? - Answers :Paper towels
absorb grease and allow the steam to leave the bacon and keep the
bacon crisp. Foil traps in this steam and can result in rubbery bacon. Additionally,
small pieces of foil could fall off and contaminate the bacon.
Why don't we save bacon for the next day use? - Answers :Bacon stored overnight in
the walk in becomes rubbery and loses flavor. It is critical
that we prepare the bacon fresh everyday to ensure crisp, high quality bacon for the
burgers and dogs.

preps for one day only. The shelf life for our products ensures
maximum freshness and the highest quality products.

appearance. Gloves are not allowed and should be kept out of customer sight.

customers? - Answers :We don't serve enough mustard to create a need for the
dispensers. Additionally, the
dispenser gets crusty from lack of use.

customers staring at them while they were
cooking the burgers.

bathroom makes our decor consistent in all areas of the
restaurant. Additionally, it helps to freshen and decorate what would otherwise be a
very plain bathroom.
Why do we separate patties from the grill one at a time? - Answers :During the burger
cooking process separating patties one at a time allows the grill
cook to keep the patties in the formation they start out with. It also helps avoid the
patty from getting torn on the grill and helps them from sticking to each other.
Why can't we put boxes of gloves or paper bags at the QC position on
the bread rack? - Answers :One box of gloves may be stored at the QC position as long
as it is out of sight of
customers (behind other packs of buns). Paper bags should be kept at the bagging
table except in very low volume stores, where they may be stored under the dressing
table to save steps with limited numbers of crew.

always appear fully stocked. This gives the customer the
impression that the store is very busy. A freestanding stack should be no more than
