Title: Exploring Enzymatic Reactions Using Potatoes
Objective(s)/Aim(s): Extract enzyme peroxidase from potatoes and perform an experiment to
demonstrate the effects of temperature on the action of an enzyme. In doing so, we will
demonstrate the effect of enzyme concentration on a peroxidase reaction, demonstrate the effect
of pH on enzymatic activity, and demonstrate enzyme inhibition.
Collect experimental data and plot the data on graphs.
Introduction:
Enzymes are very good at speeding up chemical reactions (also known as a catalyst). Their
activity is affected by temperature, pH, and various salts because they are proteins.
Enzymes are effective in small amounts because they are not used up in the reactions that they
catalyze. In this experiment, we will be exploring the enzyme peroxidase. Peroxidase is used to
break down hydrogen peroxide in the body, but it is also used to decolorize melanin. You can
find peroxidase in skin care products like chemical exfoliants and brightening products. People
with hyperpigmentation can use these products to brighten their skin. This reaction may result in
the oxidation of any reduced compounds that may be present. We will use the ability of some
