1. De geschiedenis van bier beschrijven:
 Bier is oudste alcoholische drank ter wereld
 Origine uit Mesopotamië (nu Irak) / twee stromenland
 Vanaf middeleeuwen veelal per dorp/stad gebrouwen (vroeger iedereen eigen
bier)
 Iedereen brouwde zijn eigen bier omdat het water vroeger erg goor was door
alle viezigheid die erin zat. Voor bier heb je water nodig, maar dat werd gekookt
waardoor de meeste bacteriën verdampten
 Wat is bier: Nederlandse warenwet: drank verkregen na alcoholische gisting van
Wort, Hop & Brouwwater
 60% van de Wort afkomstig van Gerst- en/of Tarwemout

2. De 4 verschillende grondstoffen:
 Gist: omzetting (vergistbare) suikers in alcohol en CO2
 Graan: granen bevatten zetmeel -> zetmeel bevat suiker -> voeding voor
gistcellen
 Hop: vrouwelijke plant/bloem = hopbel. Bittere smaak/conserveert (Lupuline
Alpha/Beta) zorgt voor schuimkraag. Bitten hop/ aroma hop
 Water: bronwater/leiding water pH (zuurgraad) water belangrijk

3. De 3 processen in bier bereiding benemen en uitleggen
Stap 1: Mout proces (weken-kiemen-eesten):
 Reinigen: ongewenst materiaal verwijderen
 Weken: korrels nemen water op en gaan kiemen/uitlopen
 Kiemen: enzymatische werking (onoplosbaar zetmeel omzetten in oplosbaar
zetmeel -> graan heet nu groenmout
 Eesten: drogen met warmen lucht -> groenmout heet nu mout. Hogere
temperatuur bij eesten geeft een donkere kleur.
