Maltase is an enzyme present in saliva and pancreatic juice. This catalyses the breakdown of maltose
and similar sugars to form glucose.
Glucose-glucose= glycoside
The glycosidic bond is broken down by adding a molecule of water, this is called hydrolysis.
H2O is added to the maltose which separates the maltose into two glucose molecules.
