Staff Food Safety Training
− Training Staff
• Training staff when they are first hired and then on an ongoing basis
• Identify staff food safety training needs by:
o Observing on the job performance
o Testing food safety knowledge
− Critical Food Safety Knowledge
• All staff should receive training on:
o Good personal hygiene
o Controlling time and temperature
o Preventing cross-contamination
o Cleaning and sanitizing
• Retraining
o Regularly retrain staff in food safety to prevent the “forgetting curve”
• Recording Keeping
o Document when a staff member completes any food safety training ans keep
records at the operation
− Ways of Training
• On the Job training
o Learners perform tasks while trainers give feedback
o Good for training individuals or small groups
o Success depends on the trainer
• Classroom Training
o Include Activities
o Encourage Questions
o Promote learning by doing and allow learners to make mistakes
− Classroom Activities
• Information search
o Give learners tools that allow them to discover food safety information for
themselves
• Guided Discussion
o Ask staff questions that draw on their knowledge and experience
o Follow up with another questions each time a learner answers
• Games
o Can make boring or difficult information exciting
• Roleplay
