P2: Potential hazards relevant to different scientific working environments.
Mcvitie’s is a British snack company that was established in 1830 on Rose Street in
Edinburgh, Scotland. McVities is known for being the best-selling biscuit manufacturer in the
UK. They manufacture a wide selection of biscuits, cakes and other snacks. For example:
 Biscuits: Digestives, Fig Roll, Ginger Nuts, Hobnobs, Rich Tea, Penguin, Taxi, Gold Bar,
etc.
 Cakes: Lyle's Golden Syrup Cake, Jamaica Ginger Cake, Lemon Cake, Mini Rolls,
Waffles, etc.
 Other snacks: Cheddars, Breakfast, Krackawheats, Cracker crisps, McVities Digestive
Slices, etc.

Food packaging is an important part of manufacturing. There are many types of allergies
related to certain ingredients in these products. Some of the products that McVities
produce are transported overseas for international selling. Due to differences in language,
the labelling on the products must be translated so that consumers from different countries
can read the allergen advice. It is important to make all allergy sufferers aware of what a
product contains to avoid any potential hazards. The majority of countries demand that text
is translated into their languages. An example of this is from the EU Food Information
Regulation No 1169/2011:

"...mandatory food information shall appear in a language easily understood by the
consumers of the member State where a food is marketed."

Accidents in production could occur in many different ways whether its falling objects or
faulty equipment. There are many steps in producing McVities food products that present
possible hazards. For example, the making of McVities digestive biscuits involves the use of
large and heavy machinery e.g. the oven. The biscuits are cooked in a long oven filled with
burners on a conveyor-belt. The oven could be hazard for the employees operating it as it is
blasted at a high temperature to bake the biscuits and could potentially burn the employees
in doing so. Hygiene in production of food products is also a major factor in the health and
safety legislations. To ensure the hygiene regulations are being carried out employees are
made to wear hairnets and safety coats.

P1: How health and safety measures in a scientific organisation comply with legislation.

The Food Standards Agency (FSA) is the independent government agency that oversees the
enforcement of food safety and standards controls. The food law guidance is a set of
regulations and requirements that British food companies must abide by to be legally
operating in the UK. Legislation covers food production and distribution as well as:

 processing
 packaging and labelling
 importing
 retailing

The main general food law is The Food Safety Act 1990, which provides the framework for
food legislation in Great Britain and creates offences in relation to safety, quality and
labelling. To comply with this McVities has partnered with a company called Talking Heads
(TH). Talking heads provides companies with translations of their products, that conform to
the labelling legislation for each market, using their in-house 16,000-word glossary. They
ensure accurate translations of text with the most efficient results.

The following regulation, regulation (EC) No 852/2004 covers the hygiene of foodstuffs and
sets out general hygiene requirements for all food businesses and related guidance. There
are four main ways to maintain personal hygiene when working in professional
environments, they are:

 handwashing
 clothing
 fitness for work
 training

To comply with this all McVities staff are given a set of suitable, clean and protective
clothing for working in the food production e.g. hairnets and safety coats. Employees are
also given training to educate them about personal and food hygiene. For example,
employees are told not to wear any watches or jewellery, not to touch their face and hair
and how to properly wash their hands.

Legislations and regulations (similarities):

Legislations and regulations are both created to organise and ensure a safe work
environment that complies with the laws of the country and are both made for the benefit
of the public. If any legislation or regulation is breached, then it could lead to serious
punishment including imprisonment.

Legislations and regulations (differences):

A legislation is a general rule that is administered by a legislative committee, whereas a
regulation is a specific part of a legislation that describes how the legislation should be
carried out. A legislation is always launched in partnership the government, whereas
regulations can be constructed within a certain company or industry.

Food labelling and manufacturing differences and similarities:

Health and safety measures taken in food labelling for Mcvitie’s are there to reduce the risk
to consumers health. If a mistake is made with the labelling it could lead to consumers
