Protein absorption happens in the small intestine, which contains microvilli. These are small, finger-like
structures that increase the absorptive surface area of the small intestine. This allows for maximum
absorption of amino acids and other nutrients.

The stomach contributes both mechanical and chemical digestion of proteins. The liver also plays an
important role in the metabolism of proteins: liver cells change amino acids in foods so that they can be
used to produce energy or make carbohydrates or fats. A toxic substance called ammonia is a by-product
of this process. The large intestine carries waste to the rectum.

Catabolism is the process of breaking protein into amino acids that can be used by the body (think
“catabolism cuts”). Anabolism is the process used by the cells to create specific proteins from those amino
acids to have specific functions.

Kabbalism is a school of thought in Jewish mysticism and more relevant to an individual’s culture and
spiritual practices than nutrition. Agnosticism is the view that the existence of God, of the divine, or the

also a complete protein.
