Food Poisoning - Answer *DEFINITION:* Illness caused by the ingestion
of food containing bacteria or toxins produced by bacteria.

-Listeria
*SYMPTOMS:*
-Nausea/Vomiting
-Diarrhea
-Fever/Chills

-Provide O2 if indicated

Salmonella - Answer *DEFINITION:* An infection (form of food
poisoning) caused by the salmonella bacteria. Received through
contaminated food or water. Patients exhibit GI symptoms within 72-
hours of ingestion.

Staphylococcus (Staph) - Answer *DEFINITION:* An Infection ("Staph")
that can persist in multiple forms. Most commonly found as a skin
infection. However, can also be caused by serving food that has been
kept too long.

-Toxic shock syndrome

*SYMPTOMS:*
-Skin infection symptoms include, pimples or boils. They may be red,
swollen and painful, and sometimes have pus or other drainage.

foods are prepared improperly. Often fatal after exposure.

Carbon Monoxide Poisoning - Answer *DEFINITION:* CO is a colorless,
odorless gas that displaces oxygen from RBC's. Multiple people in the
same area will experience similar symptoms.

-blindness, hearing loss, coma, death

-Remove patient from area if it is safe to do so.
-Provide high flow O2 or assist with ventilations
-Loosen tight fitting clothing and jewelry

untreated.

-Often presents within 2-5 days of last drink, but can occur up to 14
