FATS
Large, complex molecules that are essential for the structure,
function, and regulation of the body’s cells, tissues, and organs.
Overview
Proteins are vital nutrients found in foods like meat, fish, an
soy products. They consist of long chains of amino acids,
which are broken down during digestion into individual amin
acids.

Structure of Amino Acids
There are 20 different amino acids, each with a unique side
chain, or R group, which distinguishes one amino acid from
another.
All amino acids share a common structure, a central carbo
atom (alpha carbon) bonded to an amino group (-NH2, a
carboxyl group (-COOH), a hydrogen atom, and the variable
group. This basic structure makes amino acids organic
compounds, containing hydrogen, carbon, and oxygen.
