THE RESTAURANT BRIGADE
What is it?:
Interrelationship in the restaurant brigade. Communication and teamwork is
very important for workflow to be effective . Everyone has their own station for
their specific tasks. Senior staff supervise.

plays a largely administrative role
Maître d’ Hôtel
(hotel is first and waiter in hotel)
First head waiter
responsible for overall management of
the service and service staff
FOOD SERVICE STAFF

(reception = reservations)
Reception Waiter
handle the reservations
Maître d’ Hôtel de carre
(carre sounds like car and car reminds me of a
cart in a dining room)
Station head waiter
manage an area of the dining room
