Functions
- Energy (2x as much energy per gram as carbohydrates)
- Waterproof layers
- Insulation (ie fatty layers around organs)
- Shock absorption
- Hormones are mostly made of lipids (ie oestrogen)
- Vitamins are dissolved in lipids
Fatty acids:
Saturated
- No carbon carbon double bonds
- Have more hydrogen atoms
- Solid at room temperature as can be packed on top of each other
- Methyl group is CH3 and h
Unsaturated
- Have carbon carbon double bonds
- Oils- liquid at room temp
- More than one double bond are polyunsaturated lipids
