Complex carbohydrates Complex carbohydrates take longer to break down, meaning they
provide sustained energy over a longer period of time, without the
sudden drop in energy levels.

Oxidation The chemical reaction that takes place between food and the
oxygen in the air e.g., discolouration of an apple or potatoes when
cut or peeled and not
put it in water.
Mold Fluffy growths on the surface of food.
Perishable foods Spoil in 1-3 days at room temperature. Food should be covered
and stored in fridge or freezer,
Can be frozen, e.g., meat, poultry, fish and dairy products
like milk and cream

Spoil in 4 – 10 days at room temperature
Semi perishable foods Food can be stored in a fridge or well-ventilated cupboard
E.g., eggs, butter, margarine, cheese, fruit and vegetables,
jam and bread




Non-perishable foods Can last longer than 2 weeks at room temperature
Food can be stored in containers for a few months
e.g., sugar, coffee, flour, oats, breakfast cereal, rice, pasta,
dried fruit, nuts and canned food




Bacteria Often no change occurs in the appearance, taste and texture of
food.
Cross-contamination Contamination (infection) that occurs when bacteria intentionally
or inadvertently transmitted from one surface to another e.g.,
cutting board on which raw and fresh foods are prepared
Direct contamination Contamination of raw food, or contamination of the plants and
animals where food comes from.
Aerobic bacteria Microorganisms that need oxygen to grow
Anaerobic bacteria Microorganisms that do not need oxygen to grow
Yeasts Gas bubbles arise due to fermentation taking place.

Al fresco Eating outdoors is known as al fresco.
Exhibition The way products are arranged on the shelves.
Target group/ target A specific group of consumers at which a company targets its
market products and services.
Mass marketing Purpose: To reach as many people as possible
Buzz Marketing Word of mouth advertising of products or services when consumers
tell friends and family about them.
Market research Determine a specific target market that needs the product.
Divide the target market into different segments
Market segmentation Market segmentation means that a group of people is divided into
smaller groups who have the same needs and desires for products
and services, so the market is divided into different sections
(segments).
