Week 7 - Lipids
Classifications of Fats
Overview
Simple lipids can be found in foods and in the body
Triglycerides
Fatty acids
Structural lipids are produced by the body
Lipoproteins
Week 7 - Lipids 1
, Phospholipids
Simple Lipids
Saturated fatty acids SFAs)
Primarily in animal products (meat & dairy)
Implicated in causing increase in total & LDL cholesterol causing an
increase risk for CVD
Monounsaturated fatty acids MUFAs)
Primarily in plant foods (olive oil, canola oil, peanuts, pecans, almonds,
avocados)
Increase HDL cholesterol, which has a protective effEct for CVD
How to classify fatty acids
According to their degree of saturation
Saturation fatty acid depends on the number of hydrogen atoms
attached to the carbon.
Saturated fatty acids SFAs) contain only single bonds, with each
carbon atom having 2 hydrogen atoms attached to it
Monounsaturated fatty acids MUFAs) contain only 1 double bond
