1.1 Food Characteristics and Correct Combinations (12 marks)


When planning menus, a foodservice manager must think carefully about how food will
look, smell, taste, and feel when served. The following food characteristics must be
considered and correctly combined to ensure sensory and aesthetic appeal:

1. Colour Colour is one of the most visually striking characteristics of food. A well-
planned plate should include a variety of natural colours to stimulate appetite.
Combining foods of similar or dull colours results in an unappealing presentation.
Example: Grilled salmon (orange-pink) served with steamed broccoli (green) and yellow
butternut squash creates a vibrant, visually appealing plate.

2. Flavour Flavour refers to the overall taste experience, including sweet, sour, salty,
bitter, and umami. Flavours should complement rather than compete with each other.
Strong flavours should be balanced with milder ones. Example: A rich, creamy
mushroom sauce paired with a mildly seasoned chicken breast balances bold and
subtle flavours effectively.

3. Texture Texture refers to how food feels in the mouth crunchy, smooth, chewy, or
soft. A meal consisting entirely of soft textures is less enjoyable than one that offers
contrast. Example: A Caesar salad combines crunchy croutons and crisp lettuce with a
smooth, creamy dressing, offering textural variety.


4. Shape and Form Foods come in a variety of shapes round, flat, diced, whole and the
way these are arranged on a plate affects visual appeal. Variety in shape adds visual

, interest to a dish. Example: A platter with whole cherry tomatoes, julienned carrots, and
round chickpeas offers pleasing shape diversity.


5. Consistency and Density Consistency refers to the thickness or density of food
whether it is liquid, semi-solid, or solid. Meals should not consist entirely of one
consistency, such as all liquid or all thick, starchy foods. Example: A thick beef stew
served alongside a light, crisp garden salad provides a pleasant contrast in density.

6. Temperature Temperature affects both food safety and sensory enjoyment. Meals
should ideally offer contrast in temperature where appropriate, and hot foods must be
served hot while cold foods must be served cold. Example: Warm apple crumble served
with a scoop of cold vanilla ice cream creates a delightful hot-and-cold contrast.


1.2 Eight (8) Checklist Questions for Menu Evaluation (8 marks)

As a newly appointed foodservice manager, the following checklist questions would be
used to evaluate the menu:


1. Does the menu reflect the concept and theme of the restaurant? The items
offered should be consistent with the overall identity and positioning of the
establishment.
2. Is the menu balanced in terms of nutritional value? A good menu should
cater to the nutritional needs of customers by offering a variety of food groups.
3. Are the menu items appropriate for the target market? The dishes should suit
the preferences, demographics, dietary requirements, and expectations of the
customers being served.
4. Are the prices competitive and reflective of the food cost? Menu prices
should cover ingredient costs, labour, and overheads while remaining attractive
to customers.
5. Does the menu consider seasonal and market availability of ingredients?
Items listed should be consistently sourced, avoiding ingredients that are difficult
to obtain throughout the year.
